Garlic
Chicken Pasta

Makes: 4 servings
Ingredients:
- 8 ounces fettuccine or linguine pasta
- 1 tablespoons garlic, minced
- 3 boneless, skinless chicken breasts
- 3 tomatoes, chopped
- 1/2 cup onion, chopped
- 3/4 cup green pepper, chopped
- 1/3 cup tomato paste
- 1 teaspoon Cajun seasoning
Directions:
- Cook pasta according to package
directions. Drain well and return to the pot.
- Rinse and cut all the visible fat off
of chicken breasts. Cut chicken breasts into thin strips. Coat a large
skillet with nonstick cooking spray (nonfat). Add the garlic and
chicken, and stir-fry over medium heat for 4-7 minutes, or until the
chicken is well cooked.
- Reduce heat to low, add the remaining
ingredients (except pasta) to the skillet. Cover and simmer for about 10
minutes, stir occasionally.
- Add the pasta to the skillet, and
stir gently.
